1/4 c. GF sweet rice flour
3/8 tsp kosher salt
1 c. Half and half
2 large eggs
Oil or butter to coat the popover pan
Preheat oven to 450 degrees.
Whisk together the GF flour, the sweet rice flour and the salt.
In blender or in a jar that will accommodate a stick blender, combine half and half, eggs, and flour, in that order.
Blend at high speed with blender or stick blender. The batter will be thin, like thin pancake batter.
Brush tin with butter or oil. Place in oven for 3 minutes.
Immediately pour batter into tins, 1/2-2/3 full.
Place in oven and bake for 20-25 minutes.
Reduce heat to 300 and bake for another 5-7 minutes until deep golden brown.
Serve warm
