4 fillets of swordfish or any other firm fish, about 6 oz each
1 - 16 oz can of artichokes, not marinated
2 Roma tomatoes chopped
1 lemon, sliced thin
2 T. Fresh chopped basil or 1/2 tsp. dried
1 T. Fresh chopped thyme or 1/4 tsp dried
Olive oil
Salt/ pepper to taste
4 pieces of foil large enough to wrap up the fish and veggies

Cooking Instructions

Preheat the oven to 350 degrees.

Place 1 piece of fish on each piece of foil. Divide the artichokes, tomatoes, lemon and herbs, slat and pepper on each fish. Drizzle with olive oil. Wrap up tightly. Place on cookie sheet or jelly roll pan. Bake for about 20 minutes.
