1 c. All purpose flour
1/4 c. Barley flour
1/4 c. Oat flour
1/8 c. Teff flour
1/8 c. Buckwheat flour
2 tsp. baking powder
1 tsp. baking soda
2 generous pinches of psyllium/ ground flax mix (from GlutenFree girl)
2 eggs
2 c. Buttermilk
Grated rind of 1 lemon or orange
1/8 tsp. nutmeg
2 T. Raw sugar
2 T. Molasses
1/2 c. Chopped pecans
1/2 tsp. salt.

Cooking Instructions

Mix together all dry ingredients.
Mix together all wet ingredients in another bowl.
Stir wet into dry.
Heat pan, slick with cooking oil, use about 1/4 cup of the batter for each pancake.
