Ingredients

1 c. Medium grind cornmeal (Bob's Red Mill)
1/2 c. Corn flour
1/2 c. ATK flour mix
1/3 c. Sugar
1 tsp. salt
1 1/2 tsp cream of tartar
1 tsp. soda
1 egg
3 T. Butter, melted
1 c. Hot milk

Cooking Instructions

Heat oven to 400. Place 1 T. Butter in 9" cast iron skillet. Place skillet in oven to melt butter and heat the skillet.

Combine all dry ingredients except for sugar. In separate bowl, mix egg, sugar, butter, and hot milk. Stir dry and liquid ingredients together. Remove skillet from oven and pour the batter into it. Bake for about 20-30 minutes until lightly browned and crisp on top. And tester comes out clean.
