2 packages yeast
cup water warm
1 teaspoon sugar
1 cup butter melted
1 cups sugar
3 cups water
1 tablespoon salt
7-7 cups 7-7 cups flour

Cooking Instructions

Essentially this is a sweet bread that is dried out into crisp little pieces of bread. It smells great as the slices slowly dry out in a warm oven. Served with butter to add a bit of flavorful butter is nice.

1) Soften the yeast, warm water and sugar.

2) Add the rest of the ingredients except the flour.

3) Add enough flour(about 7 cups) to make a sponge dough and beat well. Add more flour to make dough (not too thick--probably a little less than for bread).

4) Knead on lightly floured surface until dough is smooth and satiny. Let raise, punch down and raise again. Make into buns about 2 inches in diameter. Let raise.

5) Bake at 400F to 425F F. Be sure they are well done.

6) Cool completely then slice. Put loosely in cookie sheets so heat and air can get to them. Sprinkle with Cinnamon-sugar. Toast in 225F over (or less). This takes several hours.

NOTE: Just before beginning drying you can put cinnamon-sugar on them.
