4 eggs, yolks and whites separated (room temp)
1/2 c. granulated sugar
1/4 c. powdered sugar
3/4 c. almonds, toasted and chopped
1/2 c. gf substitute flour (Bob's Red Mill)
1 tsp. baking powder
2 T orange zest
1 T fresh orange juice
1 tsp. vanilla
a couple of drops of Flor di Sicilia

1 c. powdered sugar
1/2 tsp. vanilla
drops of Flor di Sicilia
cream & milk to make it the consistency for a glaze

Cooking Instructions

Preheat oven to 350 degrees.
In a large bowl, beat together egg yolks and both sugars until well combined and almost foamy. Add almonds, flour, baking powder and orange zest.

In a separate bowl, beat the egg whiltes with orange juice and flavorings until peaks form. Gently fold into egg yoklk mixture.

Prepare 9" cake pan by rubbing with oil, lining with waxed paper and oiling/ spraying the paper. Pour in batter. Bake for 30-35 minutes until toothpick comes out clean. Remove from oven. Let cool 10 minutes. Turn out of pan. Let cool completely. Coat with glaze.

Prepare glaze:
Combine ingredients until smooth. Spread over top of cake. Sprinkle with sliced almonds.
