1 1/2 cups brown rice
3 cups water
2 T olive oil
2 Cups medium diced carrots
1 minced shallot
1/4 cup chopped parsley
Salt & pepper to taste
2/3 cup salted roasted pepitas (pumpkin seeds)

Cooking Instructions

Start cooking the rice in 3 cups of water.

Next sauté the carrots and shallot in the olive oil over moderately high heat for about 3 minutes.

After the rice is about half cooked, stir in the sautéed carrot and shallots.

Allow rice to finish cooking. Stir in chopped parsley, season to sate with salt and pepper.

Top with pepitas.
