1.5 lbs. carrots, peeled, halved lengthwise if necessary to create even pieces
2 T. Melted unsalted butter
Salt and pepper to taste

Cooking Instructions

With oven rack in middle position, heat oven to 425 degrees. On rimmed baking sheet, toss the carrots with butter, 1/2 tsp. salt and 1/4 tsp. pepper. Then spread them into a single layer. Cover the baking sheet tightly with foil. Bake for 15 minutes. Remove foil and bake, stirring once or twice, for another 30-35 minutes until browned and tender.
