Ingredients

1 cup rolled oats
13 cup oat bran
13 cup nuts finely chopped
6 Tablespoons brown sugar
1 cups flour
teaspoon salt
1 teaspoons baking powder
<sup>1</sup>&frasl;<sub>8</sub> teaspoon baking soda
1 cup buttermilk
2 large eggs
1 Tablespoon vanilla
4 Tablespoons unsalted butter melted
13 cup dried cranberries

Cooking Instructions

1) Toast the oats, oat bran, and nuts in a skillet, on stove top, till they give off a pleasant aroma and turn light brown, stirring almost constantly. Takes 15-20 minutes. Stir in brown sugar until it starts to liquify. Set aside to cool.

2) Preheat over to 400F. Lightly spray 8-12 muffin cups. Combine flour, salt, baking powder and soda with toasted oat-nut mixture and stir to mix. Measure 1 c. buttermilk, add eggs and vanilla and beat till smooth. Slowly pour liquids and melted butter and dried cranberries into dry ingredients and stir until moistened. It will be lumpy.

3) Spoon batter into muffin cups. You may have enough batter for 12 muffins, I did. Bake in middle of oven for 20-25 minutes until cake tester comes out clean.


NOTE: Marguerite used Irish rough cut oats.

You can substitute canola oil for butter.
