Dutch Apple Spice Cake with Hot Caramel Sauce: Submitted by: Siobhan Martin | Date Added: 23 Sep 2013

Makes one 9" round cake.

This is one of Siobhan's favorite recipes from Délice European Bakery & Cafe in Omaha. "It's really yummy! With the apples and butter it's really moist."

Cake Batter
˝ cup of pecans, finely processed
2˝ cups (about 4 medium) apples such as Granny Smith, chopped

˝ cup butter, room temperature
1 cup sugar
1 egg

1 tsp baking soda
˝ salt
1 tsp cinnamon
1 tsp nutmeg

1 cup all-purpose flour

1 apple

Hot Caramel Sauce
˝ cup butter
1 cup light brown sugar
˝ teaspoon salt

1 teaspoon vanilla
˝ cup evaporated milk

Cooking Instructions

1) Preheat oven to 350°.F.
2) Prep the pecans and apples.
3) Blend butter and sugar until fluffy.
4) Add the egg and beat in.
5) Add soda, salt, cinnamon, and nutmeg mixed just until blended.
6) Add flour, just blending until distributed. Add the apples and nuts mixing lightly.
7) Pour batter into greased and floured 9" round cake pan.

8) Core apple, cut in half (if not already done), and slice into thin slices. On the top of the cake fan out the slices to create a ring of apples (like a sun symbol). You can also sprinkle out cinnamon-sugar in a circle that goes through the middle of the apples.
9) Bake 30 minutes. Cool.

1) Melt and boil the butter, brown sugar, and salt, while whisking until .... Remove from heat.
2) Add vanilla and evaporated milk. Whisk until blended.

Cut with a serrated knife, since the apples on top can get hacked up man, and that's a bummer-YO! You may want to chill the cake first. Heat the sauce and drizzle it on the cake slices and top with (spiced if you wish) whip cream.

NOTE: The original recipe used an apricot glaze to improve the presentation. This was put on before cutting.
