1c. Rice
2 T. Oil
1 bunch kale, spinach, Swiss chard ( I prefer Swiss chard)
1 red,yellow or orange bell pepper, seeded,cut into cubes
1 medium sized shallot, minced
1/2 tsp. salt
1 avocado, sliced
2 large eggs
Sesame oil
Tamari soy sauce

Cooking Instructions

Cook rice according to directions. Heat oil in large frying pan. Cook kale/spinach/Swiss chard with the pepper, salt and shallot until leaves are wilted and the pepper is stir fry crunchy. Put rice in individual bowls, top with kale - pepper mix, add sliced avocado. Sprinkle some soy sauce over to taste. Fry eggs in butter to taste. Slip an egg onto each bowl. Drizzle with a bit more soy sauce, a few drops of sesame oil and sriracha to taste.
