4 pounds pork baby back ribs
24 ounces water, enough to cover ribs after beer
12 ounces beer, dark
1 small onion
1 clove garlic
1 bay leaf
5 peppercorns
Garlic-Honey Sauce (Sauce for Tom's Not-So-Secret Ribs)

Cooking Instructions

1) Add all ingredients except water into pot. Add enough water to just cover ribs. Boil ribs for about one hour and drain.

2) Allow ribs to cool by covering in sauce. Place ribs on hot grill, meat side up for about 10 minutes. Flip and repeat. Ribs are done when center is slightly blackened.

NOTE: Doug's Notes: Add more dark beer first. We fixed 6 racks in potus humongous, using 5 12-ounce bottle of dark beer, 2-3 large onions, 3 bay leaves, 15 black peppercorns were used. The ribs are easier to handle at every stage of the process, if each rack is cut into 3-4 pieces. I must say that the full-rack presentation is more impressive, even if it is more cumbersome.

Bruddha, [while we visited Easter 2000] we used Michelob's dark beer, KC Masterpiece Original BQ Sauce, orange marmalade, did not add the cilantro or and additional hot sauce.
