1c. Raw pumpkin seeds
1 1/2 tsp. light flavored oil
1/2 tsp. cinnamon
1/2 tsp. Nutmeg
1/4 tsp. allspice
1/2 tsp. sea salt
2 T. Maple syrup
1 1/4c. Dried cranberries

Cooking Instructions

Toss pumpkin seeds with oil. Stir fry in sauté pan over medium heat until they start to brown very lightly. Lower heat a bit, drizzle the maple syrup over the seeds, stir in thoroughly and then sprinkle over the spices and salt and stir in. Taste test! Add more spices until it tastes like you prefer. Spread on a cookie sheet to cool. Stir in the cranberries. Munch!

If you are making a lot of this, you might like to do it in the oven. Preheat to 300. Roast the seeds and oil for 20 minutes or until the seeds are almost dry. Then drizzle on the maple syrup and stir in. Sprinkle the spices and salt over and stir in. Roast until dry about 15 minutes, stirring occasionally. Cool. Add cranberries.
