1 cup Blanched almond flour (finely ground)
tsp Baking soda
tsp Salt
3 eggs, separated
cup Buttermilk
1 Tbs Melted butter
1 Tbs Maple syrup
1 tsp Vanilla

Cooking Instructions

1) Put whites in a bowl.

2) Put all other wet ingredients together, mix well.

3) Put all dry in a large bowl, mix very well.

4) Add wet to dry, you got it: mix well.

5) Whip whites with balloon whip for 2 minutes, very frothy...exercise is good...maybe little more whipping for soft peaks...and fold 1/3 into batter, and then fold the remaining 2/3rds.

6) Medium heat, and oil for the griddle. A 3" diameter pancake works best. They will burn easily. They cook just like regular ones, but are more fragile. Cool leftovers on rack, saran and freeze.
