175 g | 6 oz | 1 cups plain all-purpose flour
50 g | 2 oz | cup whole wheat flour
2 tsp baking powder
tsp ground nutmeg
1 tsp ground cinnamon
pinch salt

110 g | 4 oz | c water
225 g | 8 oz | 1 cups brown sugar
2 eggs beaten
1 tsp vanilla extract

50 g | 2 oz | cup golden raisins
60 g | 2 oz | chopped pecan nuts
zest from lemon
2 tsp lemon juice

4 bananas, mashed

Cooking Instructions

Nice flavor. Original recipe had 6 bananas. We used 4 and it was very dense and moist. We also added lemon zest and juice to the recipe.

1) Heat oven to 180C (350F). Grease loaf pan with butter.

2) Whisk dry ingredients together.

3) Mash bananas with lemon zest and juice.

4) Beat the butter and sugar until light and fluffy. Add vanilla and eggs beating thoroughly. Mix in dry ingredients. Add raisins, nuts, and mashed bananas. Mix thoroughly.

5) Spoon into loaf tin and bake 1 hour. Test with wooden toothpick until it comes out clean. Remove from oven. Cool 10 minutes then remove and cook completely on wire wrack.
