2 medium sweet potatoes
large shallot, sliced thinly
olive oil
2 tsp. balsamic vinegar

Cooking Instructions

Peel and slice the sweet potatoes into 1/2" thick slices. Toss with olive oil, salt and pepper. Place on air bake cookie sheet and bake at 375 for 30-40 minutes. Saute the shallots in a small amount of oil slowly until they are mostly caramelized. Add the 2 tsp. of balsamic vinegar and allow the shallots to continue to cook on very low heat until fully caramelized.
When the sweet potatoes and the shallots are fully cooked, combine and serve.
