juice of 1 lemon
1 small apple like a granny smith or honey crisp

6 ounces smoked salmon
1 Tbs capers, rinsed and drained
olive oil, for drizzling
salt & freshly ground pepper, to taste

slices of rosemary or olive bread

Cooking Instructions

WOW! This is so very simple and so very good! The tart freshness of the apple is a great complement to the fishiness of the salmon.

1) Place an oven rack in the center of the oven. Preheat the oven to 400°F. Put a single layer of bread on a baking sheet and put in the oven. Bake for 10 to 12 minutes until lightly browned and crisp. Cool to room temperature, about 10 minutes.

2) To prevent the dreaded apple browning, squeeze the lemon juice into 2 cups of water. Add the apple slices and soak until ready to use. Drain and blot with paper towels just before using.

3) Arrange the smoked salmon in a single layer one serving plate. Lay the apple slices on the top. Sprinkle the caper over the salmon and apple slices. Drizzle with olive oil and season with salt and pepper. Serve with the toasted bread.
