Ingredients

2 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
teaspoon ground cinnamon
teaspoon ground cloves
teaspoon salt
cup margarine, butter, or shortening
1 cup sugar
1 egg
cup molasses
2 Tablespoons sugar

Cooking Instructions

Makes 24 three-inch cookies.

These cookies soften even better a day after baking. The big soft ginger cookies, with their spicy aroma and taste, are a Jardine trademark. The family takes them as hostess gifts and sends them in care packages to students.

1) Combine flour, ginger, soda, cinnamon, cloves, and salt; set aside.

2) In a large mixing bowl beat margarine, butter, or shortening with an electric mixer on low speed for 30 seconds to soften. Gradually add the 1 cup sugar; beat till fluffy. Add egg and molasses; beat well. Stir dry ingredients into beaten mixture.

3) Shape into 1-inch balls (1 heaping tablespoon dough each). Roll in the 2 tablespoons sugar and place on an ungreased cookie sheet about 2 inches apart.

4) Bake in a 350F oven about 10-minutes or till light brown and still puffed. (Do not overcook.) Let stand for 2 minutes before transferring to a wire rack. Cool.
