1 cup Concord Grape Wine
cup Sugar
1 Tablespoon grated orange zest

Cooking Instructions

I first encountered this at Tico's, a mexican restaurant in Lincoln, where they had ponsonita sundaes, a fried pastry rolled in cinnamon sugar and topped with ice cream and this wine sauce. I then started seeing the wine sauce in stores and found it was great at home with ice cream that had a chocolate shell on it.

In heavy skillet bring wine and sugar to boil, stirring until sugar dissolves. Add zest and simmer until sauce is reduced by third, it starts to get pretty foamy on top about then. Makes about 1 1/3 cups. A candy thermometer should read 218-220F. Serve hot or cold.
