olive oil cooking spray
2 skinless and boneless chicken breasts (about 1˝ pounds)
1 garlic clove, minced
1 medium carrot, diced
˝ pound mushrooms, thinly sliced
4 plum tomatoes, diced
1 cup rice
˝ cup dry white wine
1˝ cups fat-free chicken broth
salt and freshly ground pepper to taste
2 Tablespoons minced flat or Italian parsley

Cooking Instructions

1) Coat a large skillet with cooking spray. Heat skillet.

2) Add chicken and brown lightly, turning once or twice. Remove chicken from skillet and reserve.

3) Add garlic, carrot, and mushrooms to skillet. Cook, stirring occasionally, for 3 minutes.

4) Add tomatoes and rice to skillet and sauté until rice becomes opaque.

5) Return chicken to skillet and add water and half of the broth.

6) Cover skillet and cook over medium heat until liquid is absorbed.

7) Add remainder of broth and continue cooking until liquid is absorbed, by which time rice should be tender. if rice is not completely tender, add 1 or 2 tablespoons of water and continue cooking.

8) Season to taste with salt and pepper and stir in parsley.

9) Transfer to a platter and serve.

Serves 4.
