Sea Salt & Vinegar potato chips
mayonnaise or sour cream
lemon juice
sweet paprika [smokey if
halibut fillets
cayenne pepper optional

Parmesan cheese

Cooking Instructions

1) Make potato chip crumbs in the food processor or just bash them around in a bag with a rolling pin.

2) Whisk together just enough mayonnaise or sour cream and lemon juice so you can dip the halibut into it and get it good and moist so the chips will stick to it. Whisk in some cayenne if you like (or some paprika).

3) Dip the halibut fillets in the mayo/lemon juice. Then dredge them in the chips.

4) You can either sprinkle the Parmesan over the fish before you bake it or you can mix it in with the chips. I usually forget the Parmesan altogether and it doesn't seem to make a difference.

5) Bake at 350F until done (about 20 minutes, depending on thickness of fillets).

NOTE: Time's or Kettle Chip style potato chips-I don't think regular potato chips would make very good crumbs.

This would work with other kinds of mild fish as well.
