Beth's Spicy Oatmeal Lemon/Raisin Cookies: Submitted by: | Date Added: 13 Sep 2011

Ingredients

½ cup butter softened
½ cup butter flavored shortening
1 cup light brown sugar
½ cup sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon salt
3 cups rolled oats
1 cup raisins

Cooking Instructions

1) Preheat oven to 350°F.

2) Cream together the butter, shortening, sugars, eggs, and vanilla.

3) In a separate bowl, combine all of the dry ingredients except the oats and raisins. Add dry ingredients to the creamed mixture, and mix well. Stir in the oats and raisins.

4) Drop by the rounded tablespoonfuls onto ungreased cookie sheets. Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets. Cool, and store in airtight container. make sure you get some, because they don't last long! Enjoy!


NOTE: Lemon Oatmeal Cookies:
- Omit cinnamon, cloves, and raisins.
- Add 1 tablespoon lemon juice with sugar, eggs, and vanilla.
- Add grated lemon peel from whole lemon with oatmeal.
- Sprinkle with powdered sugar after baking.
