Caramel Sauce: Date Added: 13 Sep 2011

1 cup sugar
6 Tablespoons butter
cup heavy whipping cream

Cooking Instructions

1) Have all ingredients ready because the sugar will burn if you don't work fast. Heat sugar on medium to medium-high heat in a heavy bottomed 2-3 quart sauce pan.

2) As the sugar begins to melt stir vigorously with a wooden spoon. As soon as the sugar comes to a boil stop stirring. From this point on only swirl the pan a bit (don't stir it). As soon as all the sugar crystals have melted (the liquid sugar should be dark amber in color) immediately add the butter to the pan and whisk until melted. Note, if this burns you can help this by adding a little water, about ½ cup, and do this again. It takes longer but helps the sugar cook more evenly.

3) Once the butter is melted take the pan off the heat, COUNT TO 3, then slowly add the cream to the pan and whisk to incorporate. Whisk until smooth. Let cool in pan for a couple minutes, then pour into a glass jar and let cool to room temperature.
