2 skinless chicken thighs
cup small onion chopped
1 clove garlic pressed
teaspoon dry mustard
salt and pepper to taste
18 cup tomato paste
cup Worcestershire sauce
1 Tablespoon cider vinegar
Tablespoon olive oil

Cooking Instructions

1) In a skillet, heat the olive oil and brown the chicken on both sides. Place in a crockpot with remaining ingredients and cook on high for 5-7 hours or low 8-9 hours, depending on your crockpot. When done shred with two forks and serve with crockpot juices.

2) ALTERNATIVELY: in a skillet, heat the olive oil and brown the chicken and onions, then add remaining ingredients and some chicken broth (maybe to c.) or water and bouillon or chicken base and cover. Let simmer on low for 1-2 hours, probably one will be sufficient. Then remove the chicken from the pan. Remove the meat from the bones and shred and return it to the sauce in the pot. If it is too loose, simmer with lid off to reduce the liquid to your taste. Serve over rice, on buns, with polenta...whatever...w/ coleslaw.
