1 package chocolate wafer cookies Crushed
teaspoon cinnamon
cup butter melted
1 cup sugar
4 eggs
1 pounds cream cheese
16 ounces bittersweet chocolate
cup butter melted
1 teaspoon vanilla extract
2 tablespoons cocoa powder
2 pounds sour cream

Cooking Instructions

1) Mix the chocolate wafer cookies, cinnamon, and cup melted butter in a blender or with a rolling pin. Press the crumbs firmly to the bottom and sides of a 10 and an 8.5 inch spring form pan. Chill.

Beat sugar and eggs until light and fluffy. Gradually add cream cheese beating well after each addition. Melt the cup butter and bittersweet chocolate together and add to the mix. While beating constantly add the vanilla, cocoa, and sour cream. Pour into the spring form pans and bake in 350F oven until toothpick in center comes out clean (at least 45 minutes and more like an hour).

Chill overnight in the refrigerator. To serve, remove from pan and decorate with chocolate shavings or candied violets. This is a very rich cake so serve small slices.
