6 ounces bittersweet chocolate
2 large egg whites
<sup>1</sup>&frasl;<sub>8</sub> teaspoon cream of tartar
½ teaspoon vanilla
¼ cup sugar
¾ cup walnuts finely chopped

Cooking Instructions

1) Place oven racks in upper and lower thirds of oven. Heat oven to 350F. Line two baking sheets with parchment.

2) Melt the chocolate and set aside. Beat the egg whites with cream of tartar until soft peaks form. With the beaters running gradually add the vanilla and sugar until the egg whites until the egg whites hold stiff peaks but don't look dry. Pour the nuts and melted chocolate over the whipped whites. Gently fold the mixture with a large rubber spatula until the color is uniform.

3) Immediately drop level teaspoons of batter onto the baking sheets leaving at least 1 inch between the cookies. Bake until shiny and cracked, 10-12 minutes. They should be firm on the outside but gooey on the inside. Slide the parchment onto rack and let cool.
