1 cup flour
½ cup cocoa
1 Tablespoon cocoa
¼ teaspoon baking soda
¼ teaspoon salt
3 Tablespoons butter
3 Tablespoons margarine
½ cup sugar
1 Tablespoon sugar
½ cup brown sugar
1 Tablespoon brown sugar
1 teaspoon vanilla
1 large egg white

Cooking Instructions

1) Beat butter & margarine, add sugars, vanilla, and beat 1 minute.

2) Beat in egg white. Add dry ingredients on low speed--just until incorporated.

3) Gather dough with hands and form 10" log. Wrap in waxed paper and plastic and refrigerate for 1 hour or until needed.

4) Slice into ¼" pieces. Place on parchment lined pans. Bake at 350°F for 11 minutes baking one pan at a time in the lower third of the oven. They're done after they have puffed and settled.

NOTE: Especially good with brut cocoa.
