butter flavor no-stick spray
1 teaspoon sugar
6 Tablespoons sugar
Fruit (see note)
1 cup 1% low-fat milk
2 large eggs
1 large egg white
2 teaspoons vanilla
23 cup unsifted flour
pinch pinch salt
<sup>1</sup>&frasl;<sub>8</sub> teaspoon nutmeg
confectioner's sugar

Cooking Instructions

1) Place rack in center of oven and heat to 350°F. Coat an 8" or 9" glass pie plate with the cooking spray, then sprinkle with 1 tsp sugar.

2) Toss fruit and 3 T sugar and let sit to macerate while you prepare the batter. In a food processor or blender, combine milk, eggs and egg white, vanilla and remaining 3 T sugar, flour, salt, and nutmeg. Process till smooth. Spread the fruit mixture in the pie pan.

3) Pour the batter over all and bake for 35 minutes or until top is puffed and golden brown. Allow to cool for 5 minutes. Serve with confectioners' sugar, whipped cream or crème fraîche

NOTE: Two thinly sliced peeled fresh frozen unsweetened peaches, or pears, or 2 C raspberries or blueberries, fresh or frozen.
