Corn Meal Muffins: Date Added: 13 Sep 2011

cup Corn Meal
cup flour
1 Tablespoon flour
2 Tablespoons and 2 teaspoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
pinch salt
1 large egg
23 cup sour cream
2 Tablespoons butter melted and cooled

Cooking Instructions

1) Preheat over to 400F.

2) Whisk dry ingredients together, and wet ones separately, keeping butter separate. Mix wet and dry then fold in butter.

3) Bake for 20 minutes.

NOTE: For best results use Bob's Red Mill Medium Grind Corn Meal.
