1 cup sliced almonds
cup unsalted melted butter--plus more for pan
cup granulated sugar
2 large eggs lightly beaten
1 cup all-purpose flour
1 teaspoon almond extract
2 cups fresh or frozen cranberries
amber or crystal sugar for sprinkling
whipped cream and orange zest for garnish

Cooking Instructions

1) Heat oven to 350F with rack in center. Brush a 10-inch pie plate with butter.

2) In a large bowl whisk together melted butter, sugar, eggs, almond extract and flour (batter will be thick). Stir in cranberries and cup almonds. Sprinkle the top with rest of the almonds and the amber sugar.

3) Bake until golden and slightly crusty on top, 50 minutes (maybe 60 if frozen cranberries were used). A cake tester should come out clean. Cool before slicing and serve with whipped cream or ice cream and orange zest or just by itself.

NOTE: Was 325F.

On 12/3/2011 I used 1/2 c. butter with 1/4 c. buttermilk. Added 1/4 tsp. soda and baking powder, and a pinch of salt. Left by: Meg (3 Dec 2011)
