Melting Pot - Wisconsin Trio Cheese Fondue (Bleu Cheese): Date Added: 13 Sep 2011

3 ounces domestic white wine
1 ounce cooking sherry
1 teaspoon shallot diced
1 cups fontina cheese shredded
1 cups butterkase shredded
2 tablespoons white flour
<sup>1</sup>&frasl;<sub>8</sub> teaspoon fresh ground pepper
1 ounce bleu cheese crumbled
3 teaspoons scallions chopped

Cooking Instructions

1) Using a fondue pot or a double boiling system, add white wine, sherry & shallots and bring to a simmer. Toss the white flour with the shredded cheese until coated.

2) Add a small amount of Wisconsin cheese/flour blend to wine mixture and stir in with a fork until melted. Continue adding small quantities of cheese mixture until the fondue reaches the consistency of warm honey.

3) Stir in fresh ground pepper. Blend all ingredients together with the fork using a whipping motions. Slowly fold in Bleu Cheese crumbles. Garnish with chopped scallions.

4) Serve with artisan breads, apples, and vegetables.
