3 cups all-purpose flour
tablespoon baking powder
cup dry milk
3 eggs
23 cup sugar
13 cup butter melted
teaspoon salt

Cooking Instructions

1) Sift together three times the flour, baking powder, and dry milk powder.

2) In another large bowl, beat eggs and add sugar beating until it's dissolved. Add butter and salt to mixture.

3) Add flour mixture; mix to a soft dough. Divide dough into 10 pieces and roll each piece into a ball. Flatten each ball into a 4-inch circle and gather edges together to enclose filling. Lightly flatten the top to make a round cake 2 inches wide and inch high. Repeat with remaining dough balls and fillings.

4) Place cakes on baking sheet. Brush each cake with beaten egg yolk. Bake in over 375F. Place a small pan of water in over to provide moisture and prevent cakes from cracking. Bake 20 to 25 minutes until browned. Remove from baking sheet with a spatula. Cool on a rack. Serve immediately or wrap cooled cakes in waxed paper or aluminum foil until ready to serve.

5) Fillings can include red bean paste, lotus not paste, and almond paste. About 8 ounces for 3 cakes. Other fillings are possible.
