cup tawny port
cup heavy cream
6 ounces semisweet chocolate finely chopped

Cooking Instructions

1) In a small saucepan over medium heat, bring the port to a boil. Boil until the port is reduced to 2 Tbs, 3 to 6 minutes. Pour it into a small cup or bowl. Thoroughly rinse the pan. Bring the heavy cream to a boil in the pan over medium-high heat, stirring occasionally. Take the pan off the heat. Stir in the chopped chocolate and reduced port until the mixture is smooth and the chocolate is melted.

2) Pour the ganache into a bowl and cover the surface with plastic to prevent the skin from forming. Put the bowl in a cool part of the kitchen and let the ganache cool to room temperature, stirring occasionally. When it's cool spread it over the brownies as directed in the recipe.
