Ingredients

1 cup apple cider vinegar
3 tablespoons minced shallots
2 tablespoons yellow mustard seed crushed
2 tablespoons freshly ground black pepper
1 tablespoon cayenne pepper
2 tablespoons minced fresh sage
1 tablespoon minced garlic
4 pounds bone-in pork shoulder

Cooking Instructions

1) Line bottom and partway up sides of pan with aluminum foil. Preheat oven to 300F (150C).

2) Whisk together the vinegar, shallots, mustard seed, pepper, sage, and garlic. Rub the mixture into the pork, coating it evenly. Let sit for several hours possibly.

3) Place the port in a large roasting pan and cover with a tight-fitting lid or aluminum foil. Cook until the meat is very tender, about 6 hours.


NOTE: May want to make more rub and save some for mayonnaise.

Original recipe called for 2 tablespoons cayenne pepper.
