1 package yeast
cup water warm
cup brown sugar packed
3 tablespoons shortening
1 tablespoon salt
1 cup water boiling
cup water cold
4 cups whole wheat flour
1-2 cups 1-2 cups all-purpose flour

Cooking Instructions

1) Soften yeast in cup water.

2) Combine sugar, shortening, salt and boiling water.

3) Add cold water. Cool to lukewarm then stir in softened yeast.

4) Add flours gradually till a stiff dough is formed.

5) Knead on lightly floured surface until dough is smooth and satiny (from 7 to 10 minutes). Place in greased bowl; cover.

6) Let rise in warm place till doubled, about 2 hours. Punch down, let rise again for 30 minutes.

7) Divide dough in half.

8) Take the first half and divide it into two equal parts. Form these into 4 inch diameter cylinders. Place on cookie sheets allowing for expansion.

9) Take the second half and roll it into a cylinder about a foot long. Divide this into eight equal parts. Form each of these into cylinders (like biscuits) about 1-1 inches thick (they'll be about 2 inches in diameter.

10) Let rise in warm place until doubled in size, about 1-1 hours. If during rising the round exceed 1 inches in height it may be necessary to flatten gently.

11) Bake at 350F for 30 to 45 minutes until lightly browned. Judgement will have to be exercised. When done, remove from oven and cover with towels till cool. Do NOT grease.

12) Desirable finished product: Rounds 1" high, 3 to 6" in diameter.
