2 c. Bob's red Mill 1-1 Baking Flour
2 tsp baking powder
1/2 tsp salt
1/2 c. butter, softened
3/4 c. sugar
2 large eggs
1 tsp vanilla
1/2 c. milk
2 c. blueberries (frozen ok)
1/4 c. raw sugar to sprinkle on tops of muffins

Cooking Instructions:

Preheat oven to 350. Grease or line 15 muffin cups.
Whisk together flour blend with baking powder and salt.
Combine butter and sugar. Beat on medium-low speed until thick. Add eggs, beat until combined.
Add dry ingredients, mixing on low speed. Mix until thick. Stop mixer and add milk and vanilla; mix until thick.
Gently fold in the blueberries. Spoon into prepared muffin pans. Fill each cavity about 2/3. Top with raw sugar if desired.
Bake until tester comes out clean about 25 minutes.
These freeze well.
