1-1 cup all-purpose flour
1 teaspoons baking powder
teaspoon salt

2/3 cup sugar
1/3 cup margarine or 6 Tablespoons butter, softened
teaspoon grated lemon zest

1 to 2 large eggs, beaten
1 to 1 cups mashed ripe bananas (2 to 3)

( cup chopped nuts)
( cup chopped dried apricots)

Cooking Instructions:

Have all ingredients at about 75F.

1) Preheat oven to 350°F. Grease an 8½ x 4½-inch loaf pan.

2) Whisk together flour, baking powder, and salt.

3) Beat in a large bowl at medium speed the sugar, shortening/butter, and lemon zest until creamy.

4) Into the creamed mixture beat in the eggs and bananas.

5) Add the dry ingredients in about 3 parts, beating until smooth after each addition. Fold in the nuts and apricots, if desired.

6) Scrape the batter into a greased pan. Bake bread about 1 hour, or until a toothpick inserted into the center comes out clean. Allow to cool slightly then remove from pan. Cool completely before slicing.
